Tuna and Corn Chowder

This is an easy Tuna and Corn Chowder recipe to make dinner that even most kids will eat. This recipe is a good one to throw together since you probably already have most ingredients on hand.

Tuna and Corn Chowder

  • 3 Tablespoons Butter
  • 1/2 Cup Onion – chopped
  • 3 Celery Stocks – Chopped
  • 3 Carrots – Peeled and Chopped
  • 2 Potatoes – Peeled and Diced
  • 4 Cups Chicken Broth
  • 1 Can of Corn – Drained
  • 2 Cans Tuna – Drained and Flaked
  • 2 Tablespoons Dried Parsley
  • 1 Teaspoon Salt
  • 1/2 Teaspoon Pepper
  • 1.5 Cups Milk
  • In a large pot over medium heat, melt butter and then add onions, celery, and carrots. Cook until vegetables are soft or about five minutes. While vegetables are cooking, peel and dice potatoes. You can submerge the potatoes in water while vegetables are cooking to avoid them turning colors.

    Add potatoes, corn and chicken broth to cooked vegetables. Bring to a boil, reduce heat, and cook until potatoes are done or about 15 minutes.

    Stir in tuna, parsley, salt, pepper, and milk. Cook until heated and then serve.

    ** To make a richer soup replace milk with half and half or evaporated milk
